Cornucopia World was founded by Unnur K. Gylfadóttir. She earned her doctoral degree in Community Nutrition from the Division of Nutritional Sciences at Cornell University. Her undergraduate degree in Nutrition and Clinical Dietetics is from the University of California, Berkeley. She is a registered dietitian with the American Dietetic Association.
Unnur is a member of the American Dietetic Association, the Florida Dietetic Association and its local chapter, the Gainesville District Dietetic Association. She is also a member of the Society for Nutrition Education.
Unnur resides in north central Florida with her husband and two young daughters.
Unnur K. Gylfadóttir was born and raised in Reykjavik, Iceland. She moved to the US for educational purposes, met her husband, and has lived here ever since!
Unnur means "wave" as do several other female names on this island. Her last name means daughter of Gylfi.
Icelandic last names follow a patronymic system, using father's first name followed by daughter (dóttir) or son.
Lately, however, parents can decide if their child's last name is based on father's first name only or both parents' first names or mother's first name only.
There is therefore no common last name in a family and women never change their name when they get married.
